Full job description
This person will oversee the hotel’s restaurant kitchen operations, including Marssa, a AAA 4 Diamond restaurant specialty restaurant, Rick’s Cafe, In Room Dining and Arabesque Lounge. The candidate should have in-depth skills and knowledge of all kitchen operations. Capable of producing a consistent product to meet and exceed guests’ needs in a timely manner. On a daily basis must monitor food production, quality and consistency, staffing levels and department training. This will primarily be a PM position.
Job Requirements:
* Experienced Restaurant Chef, three to five years’ experience in quality food production, in an upscale hotel or freestanding restaurant
* Must have (or be willing to obtain) Clark County Food Handler Safety Training card
* ServSafe certification required, or be willing to
* Excellent culinary skills and knowledge of food productions techniques
* Thorough knowledge and understanding of kitchen equipment use and operation
* Ability to bend, stoop, stand, lift 35 pounds and push carts weighing up to 200 pounds
* Outstanding leadership, management, organizational, and communication skills
* Ability to speak, read and write English
* Equipment knowledge including small wares equipment
* Solid knowledge of health and safety procedures, sanitation practices, weights and measures and various cooking techniques
* Ability to perform kitchen job functions
* Ability to work in a high pressure environment a must
* Professional appearance and demeanor required
* Ability to work flexible schedule to include weekends and holidays and stable work history required.
