The role
You run the floor, the team, the bar and the numbers. On a busy night you are the calmest person in the room and you see everything before it happens: the table that’s been waiting, the guest who’s had enough, the bar that’s two drinks behind. You lead by doing — you can open a bottle, build a G&T and run a section when it’s needed.

What you’ll do

• Pre-opening: recruit and train the floor and bar team using our training manual; set up mise en place, service sequence and opening checklists.
• Lead every service: briefings, floor presence, guest recovery, closing.
• Own the bar programme with the owners: wine list, cocktail menu, pours, stock counts, beverage cost.
• Keep us compliant: Dubai Municipality (PIC, food safety, health cards), liquor licence conditions, responsible service of alcohol, inspections.
• Rota, labour hours, ordering, cash-up, daily reporting to the owners.
• Guest relations: regulars, reviews, complaints — handled personally and fast.

Who you are

• 3+ years managing a licensed restaurant or bar, ideally in the UAE; a pre-opening is a strong plus.
• Real knowledge of wine and spirits: you can talk a guest through our list, explain a Barolo vs a Rioja, and you know how a cocktail should be built and measured.
• Good attitude: positive, hands-on, no ego, nobody is too senior to carry plates.
• Wants to learn: curious, takes feedback, keeps improving the operation and themselves.
• Situational awareness: you read a room, anticipate problems and act before the guest notices.
• Steady under pressure, firm but kind with the team, clear with the owners.
• PIC Level 3 (or willing to obtain before opening), food safety certified; fluent English, Arabic and any other languages a plus.
• Comfortable with POS, inventory and rota tools, and with Excel.

What we offer

• Salary: AED 15,000 to 18,000 per month + tips, visa, medical insurance.
• A founding role in a new venue with owners who are present and invested — and a second venue (PAUSA) following, so the path to a group role is real.
• Duty meals, 30 days’ annual leave.

Pay: AED15,000.00 – AED18,000.00 per month
