Key Duties and Responsibilities:

  • Welcome guests courteously and ensure prompt seating.
  • Address guests with correct titles and meet their requirements promptly.
  • Train team members to maintain service standards.
  • Promote and exceed LQA scores and COS for Food & Beverage.
  • Manage operations efficiently during all shifts.
  • Innovate ideas to increase profit, reduce costs, and encourage upselling.
  • Handle daily mail, guest reports, rosters, holiday forms, payroll, training, and P&L reports.
  • Maintain accurate documentation and accessible records.
  • Communicate with purchasing manager and maintain strong relations with the kitchen.
  • Ensure a safe working environment.
  • Conduct daily briefings and communicate important events.
  • Manage colleague appraisals and training (including Fire Safety, Health & Safety, Food Hygiene)
  • Order and stock inventory, maintain cleanliness and safety standards.
  • Minimize expenses (labor, beverage, dry goods) and keep food & beverage costs within targets.
  • Ensure consistency in cocktails and food service.
  • Create new cocktail recipes and bring innovative ideas to the department.
  • Monitor guest satisfaction and resolve complaints promptly and professionally.
  • Coordinate special poolside and beach events, ensuring smooth execution.
  • Maintain a visible presence during peak hours to assist guests and support staff.
  • Mentor and coach team members to enhance performance and morale.
  • Develop succession plans and identify potential leaders within the team.
  • Schedule and manage staff rotations to ensure optimal coverage.
  • Prepare and review departmental budgets and forecasts.
  • Monitor revenue streams and implement strategies to maximize profitability.
  • Track inventory usage and prevent wastage through effective controls

A suitable candidate should have a minimum of 2-4 years’ experience in an upscale 5* hotel/resort environment. Strong F&B knowledge is a must. Should have excellent interpersonal and communication skills. Should be able to build strong relationship with high profile and diverse clientele. Should be a dynamic team player and able to provide the highest standard of service to our guests. Excellent communication in English language is required, and an additional language will be highly regarded.
