Key Roles & Responsibilities
Operations Management
- Oversee day-to-day operations of multiple food trucks, ensuring smooth service, punctual deployment, and efficient workflow.
- Coordinate food truck locations, operating schedules, setup, and closure in alignment with business requirements and permits.
- Ensure all trucks are fully operational, clean, and compliant with safety, hygiene, and municipality regulations.
- Monitor equipment functionality, arrange preventive maintenance, and report technical issues promptly.
Specialty Coffee & Senior Barista Oversight
- Lead and enforce specialty coffee standards, including espresso extraction, grinder calibration, brewing techniques, milk texturing, and beverage consistency.
- Conduct regular quality checks to ensure all coffee and beverage products meet approved taste profiles and presentation standards.
- Support menu execution for both beverages and food items, ensuring consistency across all food truck units.
- Act as the technical reference for baristas, resolving complex coffee-related or operational issues.
People Management & Training
- Supervise, train, and motivate baristas and food truck crew to achieve high productivity and service excellence.
- Conduct on-the-job training, refresher sessions, and performance coaching for new and existing staff.
- Ensure staff adherence to SOPs, uniform standards, grooming policies, and professional conduct.
- Support manpower planning, duty rosters, and shift coordination across multiple food trucks.
Quality, Safety & Compliance
- Enforce strict compliance with food safety, HACCP, hygiene, and health authority standards.
- Ensure correct handling, storage, and rotation of food and beverage products.
- Maintain accurate operational checklists, temperature logs, and cleaning schedules.
- Address non-compliance issues immediately and implement corrective actions.
Inventory & Cost Control
- Monitor inventory levels, control wastage, and ensure proper stock rotation (FIFO).
- Coordinate requisitions, deliveries, and stock transfers between food trucks.
- Support cost control initiatives by minimizing waste, monitoring portion control, and preventing losses.
Customer Experience & Brand Representation
- Act as the brand ambassador across all food truck locations, ensuring consistent service and product quality.
- Handle customer feedback, complaints, and special requests in a professional and solution-oriented manner.
- Ensure a friendly, engaging, and efficient service environment at all times.
Reporting & Communication
- Reports to the F&B Manager.
- Prepare daily and weekly operational reports covering sales performance, staffing, issues, and quality observations.
- Communicate effectively with management regarding operational challenges, improvements, and resource requirements.
- Coordinate with central kitchen, warehouse, and maintenance teams as required.
Qualifications & Experience
- Minimum 3–5 years of experience in specialty coffee operations, with proven senior barista and supervisory experience.
- Demonstrated experience in managing or supervising food truck or multi-outlet F&B operations.
- Strong technical knowledge of specialty coffee equipment and brewing methods.
- Valid driving license (mandatory).
- Experience working in a fast-paced, mobile, and outdoor operational environment.
