Role Overview

This is a hands-on leadership role that goes beyond supervision. You will be working side-by-side with the team, managing everything from daily prep to inventory, food cost, and consistency across all concepts. You must have experience in cloud kitchen operations, understand cold kitchen workflows, and be driven by quality, efficiency, and hygiene.

Key Responsibilities

Lead daily operations of the central kitchen (prep, production, dispatch).

Work hands-on with the team to maintain quality and portioning standards.

Manage ordering, receiving, and inventory control with approved suppliers.

Monitor yield, food cost, wastage, and develop cost-effective systems.

Oversee recipe execution and ensure standardization across brands.

Collaborate on new menu and concept development.

Ensure compliance with Dubai Municipality food safety regulations.

Track and report daily KPIs (portioning, wastage, prep schedules, etc.).

Train and motivate kitchen staff to maintain a high-performance culture.

Coordinate with store managers for smooth handovers and feedback loops.
