Responsible for supervising stewarding operations to ensure cleanliness, hygiene, and proper maintenance of kitchen equipment and back-of-house areas. Ensures compliance with food safety standards while supporting smooth kitchen operations.

Key Responsibilities:

  • Supervise and schedule stewarding staff to ensure efficient daily operations
  • Ensure cleanliness of kitchens, stores, dishwashing areas, and waste disposal zones
  • Maintain proper use, handling, and storage of kitchen equipment and utensils
  • Enforce hygiene, sanitation, and food safety standards (HACCP)
  • Monitor inventory of cleaning supplies and request timely replenishment
  • Train stewarding staff on safety procedures, cleaning standards, and equipment handling
  • Coordinate with chefs and kitchen management to support service operations
  • Report maintenance issues, breakages, and safety hazards
  • Ensure compliance with hotel/company policies and local health regulations
