Job Description

The Assistant Sushi Chef will support the Head Sushi Chef in preparing high quality sushi, maintaining kitchen standards, and ensuring smooth operations during service.

Key Responsibilities

  • Assist in preparing sushi rolls, nigiri, sashimi, and specialty items
  • Support in fish cutting, rice preparation, and daily mise-en-place
  • Maintain cleanliness, hygiene, and food safety standards in the kitchen
  • Ensure proper storage, labeling, and handling of fresh seafood
  • Follow recipes, presentation standards, and portion controls
  • Collaborate with the kitchen team during busy hours for efficient service
  • Assist in inventory management and report shortages to the Head Chef
  • Support menu development and seasonal specials when required

Required Skills & Qualifications

  • 1–3 years of experience in sushi preparation.
  • Strong knife skills and understanding of raw fish handling
  • Ability to work in a fast-paced kitchen environment
  • Excellent teamwork and communication skills
  • Attention to detail and commitment to food hygiene
  • Willingness to learn new techniques and grow in the role
